Ingredients

  • 85g 3 oz Porridge oats
  • 85g 3 oz Dessicated coconut
  • 100g 3½ oz Plain white flour (we like Allinson) Plain white flour
  • 100g 3½ oz Unrefined golden caster sugar (we like Billington's) Unrefined golden caster sugar
  • 100g 3½ oz Butter (unsalted) plus extra for greasing
  • 1tbsp 1tbsp Golden syrup (we like Silver Spoon)
  • 1tsp 1tsp Bicarbonate of soda

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat oven to 180°C (160°C fan, gas mark 4). Put the oats, coconut, flour and sugar into a bowl.

    Melt the butter in a small pan and stir in the golden syrup. Mix the bicarbonate of soda to 2 tbsp boiling water, then add to the pan.

    • 1tbsp 1tbsp Golden syrup (we like Silver Spoon)
    • 1tsp 1tsp Bicarbonate of soda
  3. Classic mode Step 3

    Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.

  4. Classic mode Step 4

    Spoon the mixture on to buttered baking sheets, about 2.5cm/1″ apart to allow room for spreading. Bake in batches for 8-10 mins until golden. Transfer to a wire rack to cool.
