Bacon and spinach marry together wonderfully in this savoury loaf which has the added bonus of being topped with cheddar cheese.

Ingredients

  • 100g 3½ oz Bacon rasher(s)
  • ½ ½ Onion(s) chopped
  • 450g 16 oz Very strong white bread flour (we like Allinson) Very strong white bread flour
  • 1tsp 1tsp Unrefined golden granulated sugar (we like Billington's) Unrefined golden granulated sugar
  • 1tsp 1tsp Salt
  • 1 1 Easy bake yeast sachet (7g) Easy bake yeast sachet
  • 1tsp 1tsp Nutmeg grated
  • 100g 3½ oz Spinach roughly chopped
  • 15ml ½ fl oz Olive oil
  • 150ml 5⅛ fl oz Warm water
  • 50g 1⅞ oz Cheddar cheese grated

  1. Classic mode Step 1

    Fry the bacon and onion for 5 minutes. Allow to cool and cut up the bacon into small pieces.

  2. Classic mode Step 2

    Place all of the ingredients (except cheddar cheese) into a mixer with a dough hook attached. If mixing by hand put the flour, bacon, onion, spinach, sugar, salt and nutmeg into a bowl. Add the yeast and mix to a soft dough with the water and oil.

    • Unrefined golden caster sugar
    • 1tsp 1tsp Salt
    • 1 1 Easy bake yeast sachet (7g) Easy bake yeast sachet
    • 1tsp 1tsp Nutmeg grated
    • 100g 3½ oz Spinach roughly chopped
    • 15ml ½ fl oz Olive oil
    • 150ml 5⅛ fl oz Warm water
  3. Classic mode Step 3

    Mix to a soft dough and knead for 5 minutes or 10 minutes if you have mixed by hand.

    Shape into a round loaf and score into 8 sections.

    Cover with oiled cling film and leave to prove in a warm place until doubled in size. Meanwhile preheat the oven to 220°C (fan 200°C, gas mark 7).

  6. Classic mode Step 6

    Sprinkle the loaf with the grated cheese and place in the oven, reducing the temperature to 200°C (fan 180°C, gas mark 6). Bake for 25-30 mins or until the loaf sounds hollow when the bottom is tapped.
