This banana cake recipe is absolutly delicious and perfect for using up those ripe bananas.

Ingredients

  • 100g 3½ oz Butter (unsalted)
  • 275g 9¾ oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 1 1 Egg(s) (free range) beaten
  • 350g 12½ oz Self-raising wholemeal flour (we use Allinson) Self-raising wholemeal flour
  • ½tsp ½tsp Baking powder
  • ½tsp ½tsp Salt
  • 2 2 Banana(s) mashed
  • 75ml 2½ fl oz Buttermilk
  • Banana(s) sliced to decorate

The Method Enter Bake mode

  1. Classic mode Step 1

    Grease and line a deep 20 x 10cm loaf tin.

  2. Classic mode Step 2

    Cream the butter and sugar until light and fluffy, then add the egg a little at a time.

    Ingredients for this step

    • 100g 3½ oz Butter (unsalted)
    • 275g 9¾ oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
    • 1 1 Egg(s) (free range) beaten
  3. Classic mode Step 3

    Sift together the dried ingredients then using a hand mixer, mix into the creamed mixture, adding bananas and buttermilk.

    • 350g 12½ oz Self-raising wholemeal flour (we use Allinson) Self-raising wholemeal flour
    • ½tsp ½tsp Baking powder
    • ½tsp ½tsp Salt
    • 2 2 Banana(s) sliced to decorate
    • 75ml 2½ fl oz Buttermilk
  4. Classic mode Step 4

    Place into the tin and bake at 180°C (160°C, gas mark 4) for 40-45 minutes until firm to the touch. Cool and decorate with sliced bananas.
