Ingredients

For the compote

  • 1 1 Lemongrass
  • 40g 1½ oz Unrefined golden granulated sugar (we like Billington's)
  • 300g 10⅝ oz Blueberries
  • 1tbsp 1tbsp Water

For serving

  • Natural yoghurt

The Method Enter Bake mode

  1. Classic mode Step 1

    Halve the lemongrass lengthways and bruise with a rolling pin so the flavours are released during cooking.

    • 1 1 Lemongrass
  2. Classic mode Step 2

    Put the sugar, blueberries, lemongrass and water in a saucepan and cook over a low heat until the blueberry colour begins to run and the sugar has dissolved.

    Ingredients for this step

    • 40g 1½ oz Unrefined golden granulated sugar (we like Billington's)
    • 300g 10⅝ oz Blueberries
    • 1 1 Lemongrass
    • 1tbsp 1tbsp Water
  3. Classic mode Step 3

    Remove from the heat and allow to cool. Remove the lemongrass.

  4. Classic mode Step 4

    Spoon the yoghurt into four dishes and top with the compote to serve.
