Ingredients

  • 3 3 Bramley apple(s) cooking
  • 1tbsp 1tbsp Lemon juice
  • 225g 8 oz Butter (unsalted) softened
  • 4 4 Egg(s) (free range) medium
  • 350g 12½ oz Self-raising wholemeal flour (we use Allinson) Self-raising wholemeal flour
  • 2tsp 2tsp Baking powder
  • 225g 8 oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • Unrefined demerara sugar to sprinkle (we use Billington's) Unrefined demerara sugar

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 180°C (160°C fan, 350°F, gas mark 4). Grease and line a rectangular 27cm x 20cm baking tin with parchment paper.

  2. Classic mode Step 2

    Peel, core and slice the apples into a bowl. Add the lemon juice and set aside until ready to use.

  3. Classic mode Step 3

    Place the butter, caster sugar, eggs, flour and baking powder into a large bowl and beat until smooth and fluffy.

    Spoon half the cake mixture into the prepared tin and top with the apples. Spoon
    over the remaining mixture.

  5. Classic mode Step 5

    Sprinkle with the demerara sugar. Bake for 45-50 minutes until golden brown and springy to the touch. Leave to cool before turning on to a cooling rack and cutting into squares to serve.
