Ingredients

  • 600ml 20⅜ fl oz Milk (whole)
  • 227ml 7¾ fl oz Double cream
  • 4 4 Egg yolk(s) (free range)
  • 175g 6¼ oz Unrefined golden granulated sugar (we use Billington's) Unrefined golden granulated sugar
  • 75g 2¾ oz Breadcrumbs from brown bread

The Method Enter Bake mode

  1. Classic mode Step 1

    In a small pan gently heat the milk and cream until it is steaming.

    • 600ml 20⅜ fl oz Milk (whole)
    • 227ml 7¾ fl oz Double cream
  2. Classic mode Step 2

    Whisk together the egg yolks and 50g of the sugar until pale and thick, then pour onto the milk. Wash out the pan and return the mixture to it then cook gently for 6-7 minutes until it lightly coats the back of a spoon. Cool and put in the fridge.

    Preheat the grill to high, mix the breadcrumbs with the remaining sugar and spread it out on a baking tray.

    Put this in the base of the grill and watch, regularly re-spreading the breadcrumbs until it turns dark golden brown. Leave to cool, then break up into large pieces.

  5. Classic mode Step 5

    Process the ice cream in an ice cream maker until soft frozen, then place in a plastic container and stir in the crumbs until they are evenly distributed.

  6. Classic mode Step 6

    Place in the freezer for 2 hours or until frozen.
