These blueberry muffins are really easy to make and at 230 calories per muffin,  this great tasting recipe is good for your waistline too.

Ingredients

  • 350g 12½ oz Plain white flour (we use Allinson) Plain white flour
  • 3tsp 3tsp Baking powder
  • 6tbsp 6tbsp Truvia Baking Blend Truvia Baking Blend
  • 1 1 Egg(s) (free range) large
  • 260ml 8⅞ fl oz Buttermilk
  • 1tsp 1tsp Vanilla extract (we use Nielsen-Massey) Vanilla extract
  • 3tbsp 3tbsp Vegetable oil
  • 250g 8⅞ oz Blueberries

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 180°C (160°C fan, gas mark 4). Line a muffin tin with muffin cases.

    Sieve the flour and baking powder into a bowl then add the Truvia Baking Blend.

    In a jug mix the egg, buttermilk, vanilla extract and vegetable oil, then add to the flour and mix until well combined.

    • 1tsp 1tsp Vanilla extract (we use Nielsen-Massey) Vanilla extract
    • 3tbsp 3tbsp Vegetable oil
  4. Classic mode Step 4

    Carefully fold in the blueberries ensuring they are evenly distributed.

    • 250g 8⅞ oz Blueberries
  5. Classic mode Step 5

    Spoon evenly into the muffin cases until they are 2/3 full, then bake in the oven for 25-30 minutes until springy to the touch.

    Cool on a wire rack.
