Why not try this delicious low calorie gazpacho.  A deliciously fresh cold tomato soup. The amount of sugar you will need for this recipe will depend on the sweetness of the tomatoes. Taste and add more sugar as necessary.

Ingredients

  • 1kg 2¼ lb Tomato(es) fresh
  • 2 2 Garlic clove(s)
  • 1 1 Red pepper diced
  • ½ ½ Cucumber de-seeded and diced
  • 2 2 White bread slices cut into squares
  • 2tbsp 2tbsp Mint leaves chopped
  • 125g 4½ oz Red wine vinegar
  • 3tsp 3tsp Half Spoon granulated sugar Half Spoon granulated sugar
  • 125ml 4¼ fl oz Olive oil

The Method Enter Bake mode

  1. Classic mode Step 1

    Cut a small cross in the bottom of the tomatoes and place in a bowl of boiling water. Leave for 7-9 minutes. Drain and then plunge into cold water. Peel the skins off the tomatoes. Cut into cubes and place in a mixing bowl with the garlic, peppers and cucumber.

    • 1 1 Red pepper diced
    • ½ ½ Cucumber de-seeded and diced
  2. Classic mode Step 2

    Add the bread, mint, vinegar, sugar and olive oil. Cover and chill for about 1 hour or preferably over night. Taste and adjust the taste with sugar. Serve with pitta bread.
