This lovely tea bread is so simple to make and the combination of tea and raisins makes a delicious yet ‘not-so naughty’ treat if you are watching those calories.

The Method Enter Bake mode

  1. Classic mode Step 1

    Place the raisins in a bowl and pour over the tea, then leave to soak for  1-2 hours.

    Ingredients for this step

    • 250g 8⅞ oz Raisins
    • 300ml 10⅛ fl oz Tea cold, black
  2. Classic mode Step 2

    Preheat the oven to 180°C (160°C fan, gas mark 4). Line a 900g (2 lb ) loaf tin with baking parchment.

    Add the flour, baking powder, Half Spoon sugar and eggs to the raisins and tea and beat until smooth.

    Pour into the tin and bake in the oven for 45 minutes or until a skewer comes out cleanly.

    Allow to cool for 15 minutes in the tin, then turn out and allow to cool on a wire rack.

    This cake will keep for 1 week in a cake tin.
