A fiery mix of heat and spice combine to make this tasty focaccia, ideal for a Summer lunch.  Best served whilst still warm.

Ingredients

  • 300g 10⅝ oz Very strong white bread flour (we use Allinson) Very strong white bread flour
  • 100g 3½ oz Strong white bread flour (we use Allinson) Strong white bread flour
  • 1tsp 1tsp Sea salt
  • 2 2 Chillies small, red
  • Coriander (fresh) handful of leaves, chopped
  • 1tbsp 1tbsp Ginger fresh, peeled and grated
  • 1 1 Easy bake yeast sachet (7g) Easy bake yeast sachet
  • 225ml 7⅝ fl oz Warm water
  • 1tbsp 1tbsp Olive oil plus extra for the glaze

  1. Classic mode Step 1

    Place all the ingredients (except half the chillies and coriander) into a mixer with a dough hook attached. If mixing by hand, put the dry ingredients (except half the chillies and coriander) into a bowl and sprinkle on the yeast, then mix to a soft dough with the water and oil.

    • 1tsp 1tsp Sea salt
    • 1 1 Chillies small, red
    • Coriander
    • 1tbsp 1tbsp Ginger fresh, peeled and grated
    • 1 1 Easy bake yeast sachet (7g) Easy bake yeast sachet
    • 225ml 7⅝ fl oz Warm water
    • 1tbsp 1tbsp Olive oil plus extra for the glaze
  2. Classic mode Step 2

    Knead for 5 minutes if you have used a dough hook or 10 minutes on a floured board if mixing by hand.

  3. Classic mode Step 3

    Shape the dough into a circle. Place onto a greased baking sheet and dimple the surface with your fingertips.

  4. Classic mode Step 4

    Sprinkle over the remaining chillies and coriander and leave to prove until double in size. Meanwhile preheat the oven to 190°C (fan 170°C, gas mark 5).

    Brush with olive oil then bake for 30 minutes.
