Chocolate banana cake

The combinations of chocolate, banana and walnuts adds great flavour and texture to this cake. Why not serve as a quick pudding sliced with a scoop of ice cream?

Ingredients

  • 3 3 Banana(s) medium sized, ripe
  • 175g 6¼ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  • 175g 6¼ oz Self-raising white flour (we use Allinson) Self-raising white flour
  • 2 2 Egg(s) (free range) beaten
  • 3tbsp 3tbsp Sunflower oil
  • 55ml 2 fl oz Milk (whole)
  • 110g 4 oz Milk chocolate chips or chopped milk chocolate
  • 75g 2¾ oz Walnuts chopped

The Method Enter Bake mode

  1. Classic mode Step 1

    Grease a 20 x 10 cm loaf tin. Preheat the oven to 180°C (350°F, gas mark 4).

    In a mixing bowl mash the bananas with the sugar until smooth.

    Stir in the flour, eggs, oil and milk, mixing well until everything is thoroughly combined.  Gently fold in the chocolate and walnuts.

    • 2 2 Egg(s) (free range) beaten
    • 3tbsp 3tbsp Sunflower oil
    • 55ml 2 fl oz Milk (whole)
    • 110g 4 oz Milk chocolate chips or chopped milk chocolate
    • 75g 2¾ oz Walnuts chopped
  4. Classic mode Step 4

    Pour into the tin and cook for 50-60 minutes until cooked through.

  5. Classic mode Step 5

    Remove from the oven and cool in the tin for 5 minutes. Then turn out of the tin and leave to cool on a wire rack. Serve in slices.
