This chocolate cherry cake recipe is a recipe by Jason Atherton.  It’s so delicious and very easy to make.  Perfect to bake as a gift for someone or just for you!

Ingredients

  • 200g 7⅛ oz Plain chocolate (70% cocoa) broken into pieces
  • 125g 4½ oz Butter (unsalted) cubed
  • 50g 1⅞ oz Almonds (ground)
  • 100g 3½ oz Self-raising white flour (we use Allinson) Self-raising white flour
  • 4 4 Egg(s) (free range) large
  • 125g 4½ oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 2tbsp 2tbsp Jam cherry
  • Cherries halved

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat oven to 180°C (gas mark 4). Line a 20cm cake tin with baking paper.

  2. Classic mode Step 2

    Place chocolate and butter in a bowl over a pan of simmering water. Melt, then cool and stir in ground almonds and flour.

  3. Classic mode Step 3

    In a separate bowl, whisk the eggs and sugar for 5 minutes, then fold the egg mixture into the chocolate.

    Spoon the cake batter into the tin. Bake for 20-25 minutes, until set but slightly soft in the centre.

  5. Classic mode Step 5

    Remove from the oven, allow to cook in the tin then transfer to a wire rack. Spread with warm cherry jam and top with fresh cherries.
