Ingredients

  • 450g 16 oz Very strong white bread flour (we use Allinson) Very strong white bread flour
  • 170ml 5⅞ fl oz Warm water
  • 1½tsp 1½tsp Salt
  • 75g 2¾ oz Marzipan finely chopped
  • 50g 1⅞ oz Almonds (ground)
  • 100g 3½ oz Mincemeat
  • 50g 1⅞ oz Cranberries
  • 50g 1⅞ oz Glacé cherries halved
  • 3tbsp 3tbsp Unrefined dark muscovado sugar (we use Billington's) Unrefined dark muscovado sugar
  • 7g ⅜ oz Easy bake yeast (we use Allinson) Easy bake yeast
  • 2tbsp 2tbsp Rum
  • 35ml 1¼ fl oz Butter (unsalted) melted
  • 1 1 Egg(s) (free range) beaten

The Method Enter Bake mode

  1. Classic mode Step 1

    Put the flour, sugar, salt, marzipan, almonds, mincemeat, cranberries, cherries and yeast into a bowl.

    • 450g 16 oz Very strong white bread flour (we use Allinson) Very strong white bread flour
    • 3tbsp 3tbsp Unrefined dark muscovado sugar (we use Billington's) Unrefined dark muscovado sugar
    • 75g 2¾ oz Marzipan finely chopped
    • 50g 1⅞ oz Almonds (ground)
    • 100g 3½ oz Mincemeat
    • 50g 1⅞ oz Cranberries
    • 50g 1⅞ oz Glacé cherries halved
    • 7g ⅜ oz Easy bake yeast (we use Allinson) Easy bake yeast
  2. Classic mode Step 2

    Mix to a soft dough with the rum, butter, water and egg. Turn onto a floured surface and knead for 10 minutes.

    • 2tbsp 2tbsp Rum
    • 35ml 1¼ fl oz Butter (unsalted) melted
    • 170ml 5⅞ fl oz Warm water
    • 1 1 Egg(s) (free range) beaten
  3. Classic mode Step 3

    Shape as desired and put into an appropriate greased tin.

  4. Classic mode Step 4

    Leave to prove until double in size. Preheated to 220°C (fan 200°C, gas mark 7).

  5. Classic mode Step 5

    Bake in an oven and immediately turn the heat down to 200°C (fan 180°C, gas mark 6).

  6. Classic mode Step 6

    Bake for 30-35 minutes.
