What would Christmas be without Christmas pudding? This traditional recipe filled with dried fruits, candied peel and brandy is sure to be a hit on the big day. Typically this recipe is made up on stir up Sunday giving it plenty of time to mature in flavour.

Ingredients

  • 100g 3½ oz Raisins
  • 150g 5⅜ oz Sultanas
  • 150g 5⅜ oz Figs
  • 1 1 Apple(s) eating, grated
  • 75g 2¾ oz Candied peel
  • 100g 3½ oz Glacé cherries Glacé cherries
  • 80ml 2¾ fl oz Brandy
  • 1 1 Orange(s) zest and juice
  • 100g 3½ oz Butter (unsalted)
  • 165g 5⅞ oz Unrefined dark muscovado sugar Unrefined dark muscovado sugar
  • 3 3 Egg(s) (free range)
  • 100g 3½ oz Self-raising white flour (we like Allinson) Self-raising white flour
  • 100g 3½ oz Breadcrumbs
  • 30g 1⅛ oz Almonds (ground)

The Method Enter Bake mode

  1. Classic mode Step 1

    Put the dried fruit, brandy, juice and zest of the orange in a bowl. Cover and soak overnight.

    • 150g 5⅜ oz Figs
    • 1 1 Apple(s) eating, grated
    • 75g 2¾ oz Candied peel
    • 80ml 2¾ fl oz Brandy
    • 1 1 Orange(s) zest and juice

    Add remaining ingredients and mix until well combined.

    Grease  a 1.25Lt pudding basin and line the base with non-stick baking parchment.

    Spoon the pudding mixture into the basin and press down well.

    Cover with a pleated piece of buttered foil with the buttered side towards the pudding.

    Fold the foil over the edge of the basin and tie with kitchen string so no steam can escape. Make a string handle to lift the hot basin out of the pan.

    Put the basin in a large pan. Pour in boiling water to come half way up the basin. Cover, bring to the boil, reduce the heat and simmer for 4 hours, topping up regularly with more boiling water.

  8. Classic mode Step 8

    Leave the pudding to cool then lift from the pan. Replace the string, foil and paper with a fresh lot. Store in a cool, dark place until needed.

  9. Classic mode Step 9

    Before serving, steam in exactly the same way for 1 ½ hours.
