This Christmas pudding vodka works well as an indulgent after dinner drink with friends or a gift to a loved one. Make it from good quality vodka and the flavours will be mellow and warming to give you festive cheer.

Ingredients

  • 1tsp 1tsp Mace
  • 2 2 Cinnamon stick(s)
  • 300g 10⅝ oz Currants
  • 200g 7⅛ oz Mixed peel
  • 2tbsp 2tbsp Orange juice freshly squeezed
  • 2tbsp 2tbsp Lemon juice freshly squeezed
  • 1 1 Orange zest
  • 1 1 Lemon zest
  • 750g 26½ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  • 2tsp 2tsp Mixed spice
  • 1l ⅜ gal Vodka

  1. Classic mode Step 1

    Warm the spices in a dry pan over a low heat for 10 minutes – keep them moving so that they do not catch

    Ingredients for this step

    • 1tsp 1tsp Mace
    • 2 2 Cinnamon stick(s)
    • 2tsp 2tsp Mixed spice
  2. Classic mode Step 2

    Combine all of the remaining ingredients except for the vodka in a large bowl. Mix well and add the warmed spices.

    • 2tbsp 2tbsp Orange juice freshly squeezed
    • 2tbsp 2tbsp Lemon juice freshly squeezed

    • 750g 26½ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  3. Classic mode Step 3

    Pour over the vodka. Stir until all is well combined. Cover and refrigerate for 3 – 4 days, stirring daily.

  4. Classic mode Step 4

    When ready to bottle the vodka, line a sieve with muslin or a clean j –cloth. Set this over a clean bowl and pour in the vodka and fruits. Reserve the soaked fruits for other uses (such as boozy mince pies).

  5. Classic mode Step 5

    Decant into clean bottles and seal. Store for up to one year. Can be served from the freezer or at room temperature. To give as a frozen gift – freeze for at least 24 hours, and then label and decorate. Use a bottle gift bag to present.
