Ingredients

For the decoration

  • 500g 17⅝ oz Icing sugar (we use Silver Spoon) Icing sugar
  • 160g 5⅝ oz Butter (unsalted)
  • 50ml 1¾ fl oz Milk (whole)
  • 1½tsp 1½tsp Vanilla extract (we use Nielsen-Massey)
  • 50g 1⅞ oz Dessicated coconut
  • White sugar paste icing
  • Black sugar paste icing
  • Red sugar paste icing
  • Orange sugar paste icing

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 180°C (160°C, 350°F, gas mark 4). Place paper cases in a 12 hole bun tin.

    Beat the butter and sugar in a mixing bowl until light and creamy.

    Gradually beat in the egg then stir in the flour, baking powder and vanilla extract until smooth.

    • 150g 5⅜ oz Self-raising white flour (we use Allinson) Self-raising white flour
    • 1½tsp 1½tsp Vanilla extract (we use Nielsen-Massey)
  4. Classic mode Step 4

    Spoon into the paper cases and bake for 20-25 minutes until well risen and golden. Place on a wire rack to cool.

  5. Classic mode Step 5

    To make the buttercream, beat together the butter, icing sugar, milk and vanilla extract until smooth. Spread on top of the cupcake and sprinkle with dessicated coconut.

  6. Classic mode Step 6

    To make the snowman, shape two balls of white sugar paste icing one slightly larger than the other to form the head and base. Roll out a small amount of red sugar paste icing in a small sausage shape and wrap it around the neck of the snowman to form the scarf.

  7. Classic mode Step 7

    Roll out small balls of black sugar paste icing and stick to the snowman shape to form the eyes, mouth and buttons.

    To finish, roll out a small amount of orange sugar paste icing into a cone shape and attach to the snowman for the carrot nose.

    Secure the snowman on to the top of the cupcake.
