Ingredients

For the cupcakes

  • 50g 1⅞ oz Cocoa powder
  • 175g 6¼ oz Self-raising white flour (we use Allinson) Self-raising white flour
  • ½tsp ½tsp Baking powder
  • 225g 8 oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 225g 8 oz Butter (unsalted) softened
  • 3 3 Egg(s) (free range) large
  • 1tsp 1tsp Chocolate extract (we use Nielsen-Massey) Chocolate extract

For the buttercream

  • 500g 17⅝ oz Icing sugar (we use Silver Spoon) Icing sugar
  • 160g 5⅝ oz Butter (unsalted) softened
  • 50ml 1¾ fl oz Milk (whole)
  • Green food colouring a few drops
  • Chocolate decorations

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 180°C (160°C fan, gas mark 5) and line a muffin tin with muffin cases.

  2. Classic mode Step 2

    Cream the butter and sugar together until light and fluffy. Add the eggs one by one, mixing well in between, then add the chocolate extract. Finally fold in the flour, cocoa and baking powder until well combined.

    • 160g 5⅝ oz Butter (unsalted) softened
    • 225g 8 oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
    • 3 3 Egg(s) (free range) large
    • 1tsp 1tsp Chocolate extract (we use Nielsen-Massey) Chocolate extract
    • 175g 6¼ oz Self-raising white flour (we use Allinson) Self-raising white flour
    • 50g 1⅞ oz Cocoa powder
    • ½tsp ½tsp Baking powder
  3. Classic mode Step 3

    Spoon the mixture evenly into the cases and bake in the oven for 25 minutes or until they are springy to the touch and a skewer comes out clean.

  4. Classic mode Step 4

    To make the buttercream use an electric mixer or hand mixer to mix the icing sugar and butter together until you get a breadcrumb texture, then add the milk and mix on high speed until and fluffy. Add a few drops of green food colouring to the buttercream and mix until you get a ‘Christmas tree’ green colour.

    • 500g 17⅝ oz Icing sugar (we use Silver Spoon) Icing sugar
    • 160g 5⅝ oz Butter (unsalted) softened
    • 50ml 1¾ fl oz Milk (whole)
    • Green food colouring a few drops
  5. Classic mode Step 5

    Pipe the buttercream onto the cakes in a pyramid and top the ‘trees’ with decorations for the perfect finishing touch.
