This chocolate pistachio and white chocolate loaf cake is truly scrumptious! Why not try making a batch for yourself, or friends. Omit the pistachio and chocolate chunks if you prefer a plainer cake, or add chopped peanuts or milk chocolate chunks.

Ingredients

  • 100g 3½ oz Butter (unsalted)
  • 50ml 1¾ fl oz Hot water
  • 100g 3½ oz Plain chocolate (70% cocoa) broken into chunks
  • 100g 3½ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  • 50ml 1¾ fl oz Sour cream
  • 1 1 Egg(s) (free range)
  • 100g 3½ oz Self-raising white flour (we use Allinson) Self-raising white flour
  • 25g 1 oz Cocoa powder
  • 75g 2¾ oz White chocolate chopped
  • 75g 2¾ oz Pistachio nuts chopped

The Method Enter Bake mode

  1. Classic mode Step 1

    Pre heat the oven to 180°C (fan oven 160°C, gas mark 4).

  2. Classic mode Step 2

    Melt the butter with 50ml hot water in a medium pan until melted. Add the chocolate and stir until melted. Cool for a minute or two then stir in the sugar, sour cream and egg.

    • 50ml 1¾ fl oz Hot water
    • Dark chocolate
    • 100g 3½ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
    • 50ml 1¾ fl oz Sour cream
    • 1 1 Egg(s) (free range)
  3. Classic mode Step 3

    Whisk the flour and cocoa powder into the chocolate mixture until smooth. Stir in most of the chopped white chocolate and pistachio nuts.

    • 100g 3½ oz Self-raising white flour (we use Allinson) Self-raising white flour
    • 25g 1 oz Cocoa powder
    • 65g 2⅜ oz White chocolate chopped
    • 65g 2⅜ oz Pistachio nuts chopped
  4. Classic mode Step 4

    Divide the mixture between 6 mini loaf tins or muffin moulds and sprinkle the remaining pistachio nuts and chopped chocolate on top.

    • 10g ½ oz Pistachio nuts chopped
  5. Classic mode Step 5

    Bake for 20-30 minutes until risen and just firm to the touch. Allow to cool.
