Ingredients

For the fairy cakes

  • 125g 4½ oz Butter (unsalted) softened
  • 125g 4½ oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 2 2 Egg(s) (free range) medium, lightly beaten
  • 1tsp 1tsp Vanilla extract (we use Nielsen-Massey)
  • 125g 4½ oz Self-raising white flour (we use Allinson) Self-raising white flour
  • 2tbsp 2tbsp Milk (whole)

For the icing

  • 250g 8⅞ oz Fondant icing sugar (we use Silver Spoon) Fondant icing sugar
  • 45ml 1½ fl oz Warm water
  • Food colouring colour of your choice
  • Dolly mixture

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 190°C (170°C fan, 375°F, gas mark 5). Prepare a 12 hole cake tin, use paper cases or butter the base and sides of the holes before filling with mixture.

  2. Classic mode Step 2

    In a mixing bowl beat the softened butter and sugar until fluffy and pale. You can use a wooden spoon or an electric whisk.

    Whisk in the beaten eggs, a little at a time, then beat in the vanilla.

    • 2 2 Egg(s) (free range) medium, lightly beaten
    • 1tsp 1tsp Vanilla extract (we use Nielsen-Massey)
  4. Classic mode Step 4

    Sift in half of the flour and fold into the mixture. Add the milk and the rest of the flour and fold until well combined.

    Spoon into the tin and bake for 12 minutes or until risen with a golden top. Allow to cool for ten minutes on a rack before removing from the tin.

  6. Classic mode Step 6

    Decorate your cakes with fondant icing and sprinkle with your favourite sweeties, we like to use dolly mixtures.
