Simple but delicious flavours, this feta and tomato loaf is a great addition to any picnic or side dish at a dinner party. The sweet, ripe tomatoes perfectly balances the creamy feta cheese.

The great thing about this loaf is that it requires no kneading or proving, just mix in the ingredients and bake. 50 minutes later you'll have a fragrant loaf, which will be a showshopping hit with your family and friends.

Method

  1. Step 1:

    Preheat the oven to 180°C (160°C fan, gas mark 4).

  2. Step 2:

    In a large bowl, mix together the eggs and flour.

  3. Step 3:

    Add the baking powder, milk, oil, cheeses and sundried tomatoes and mix well until you have a doughy mixture.

  4. Step 4:

    Season the dough with salt and pepper and add the basil before continuing to mix.

  5. Step 5:

    Grease a loaf tin with a little butter and pour in the mixture.

  6. Step 6:

    Bake for 50 minutes on a medium shelf.

  7. Step 7:

    Once cooked, remove from the oven and leave to cool before serving.

    • 3 Egg(s) (free range)
    • 160g Allinson's Plain White Flour
    • 1 tsp Baking powder
    • 150ml Milk (whole)
    • 50ml Olive oil
    • 100g Cheddar cheese (mature)
    • 200g Feta cheese
    • 100g Sundried tomatoes (chopped)
    •  Basil leaves (small bunch, chopped)
    • 1pinch Salt (to season)
    • 1pinch Pepper (to season)
