Ingredients

  • 75g 2¾ oz Sultanas
  • 30ml 1 fl oz Brandy
  • 25g 1 oz Unrefined golden granulated sugar (we use Billington's)
  • 1tsp 1tsp Cinnamon
  • 150g 5⅜ oz Self-raising white flour (we use Allinson) Self-raising white flour
  • 1tsp 1tsp Baking powder
  • 1tsp 1tsp Mixed spice
  • 125g 4½ oz Margarine
  • 125g 4½ oz Unrefined dark muscovado sugar (we use Billington's) Unrefined dark muscovado sugar
  • 2 2 Egg(s) (free range) large
  • 50g 1⅞ oz Walnuts
  • 125g 4½ oz Mincemeat good quality

The Method Enter Bake mode

  1. Classic mode Step 1

    Place the sultanas and brandy in a bowl, stir well and leave to marinate.

    Ingredients for this step

    • 75g 2¾ oz Sultanas
    • 30ml 1 fl oz Brandy
  2. Classic mode Step 2

    Preheat the oven to 190°C (fan 170°C, gas mark 5) for about 20 minutes. Grease and base line a 25.5 x 16cm (10 x 6.5 in) oblong baking tin.

    Mix together the granulated sugar and ground cinnamon and set aside.

    • 25g 1 oz Unrefined golden granulated sugar (we use Billington's)
    • 1tsp 1tsp Cinnamon
  4. Classic mode Step 4

    Sieve the flour, baking powder and mixed spice into a large bowl. Add the margarine, muscovado sugar and eggs and beat well with a wooden spoon or electric hand whisk until smooth.

    • 1tsp 1tsp Mixed spice
    • 125g 4½ oz Margarine
    • 125g 4½ oz Unrefined dark muscovado sugar (we use Billington's) Unrefined dark muscovado sugar
    • 2 2 Egg(s) (free range) large
  5. Classic mode Step 5

    Fold the nuts, mincemeat and marinated sultanas into the mixture and spoon into the tin. Level the surface and sprinkle over the cinnamon sugar.

    • 50g 1⅞ oz Walnuts
    • 125g 4½ oz Mincemeat good quality
  6. Classic mode Step 6

    Bake in the oven for about 20 minutes or until golden and a skewer inserted in the centre comes out clean. Allow to stand in the tin for 10 minutes before turning out onto a wire rack to cool.

    Transfer the cake to a board and cut into squares.
