Ingredients

  • 1 1 Herman the German starter mix
  • 225g 8 oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 300g 10⅝ oz Plain white flour (we use Allinson) Plain white flour
  • ½tsp ½tsp Salt
  • 2 2 Egg(s) (free range) large
  • 2tsp 2tsp Vanilla extract (we use Nielsen-Massey) Vanilla extract
  • 2 2 Apple(s) cooking, cut into 1cm cubes
  • 200g 7⅛ oz Raisins
  • 2tsp 2tsp Cinnamon
  • 2tsp 2tsp Baking powder

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 180°C (gas mark 4). Grease and line a 20cm round cake tin with baking parchment.

  2. Classic mode Step 2

    In a large bowl mix together all the ingredients until well combined.

    • 300g 10⅝ oz Plain white flour (we use Allinson) Plain white flour
    • ½tsp ½tsp Salt
    • 2 2 Egg(s) (free range) large
    • 2tsp 2tsp Vanilla extract (we use Nielsen-Massey) Vanilla extract
    • 2 2 Apple(s) cooking, cut into 1cm cubes
    • 200g 7⅛ oz Raisins
    • 2tsp 2tsp Cinnamon
    • 2tsp 2tsp Baking powder
  3. Classic mode Step 3

    Pour the mixture into the tin and bake for 45-50 minutes or until a skewer comes out clean.

  4. Classic mode Step 4

    Remove from the oven and leave to cool.
