Ingredients

For the loaf

  • 400g 14⅛ oz Very strong white bread flour (we use Allinson) Very strong white bread flour
  • 1½tsp 1½tsp Easy bake yeast (we use Allinson) Easy bake yeast
  • 3tbsp 3tbsp Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  • 1tsp 1tsp Salt
  • 4tsp 4tsp Cinnamon ground
  • 2 2 Orange zest
  • 50g 1⅞ oz Mixed peel
  • 50g 1⅞ oz Sultanas
  • 50g 1⅞ oz Raisins
  • 30g 1⅛ oz Butter (unsalted) melted
  • 1 1 Egg(s) (free range) beaten
  • 175ml 6 fl oz Warm water

  • 3tbsp 3tbsp Plain white flour (we use Allinson)
  • 2tsp 2tsp Unrefined golden granulated sugar (we use Billington's)
  • 2tbsp 2tbsp Water cold

The Method Enter Bake mode

  1. Classic mode Step 1

    In a bowl, mix together the flour, yeast, sugar, salt, cinnamon, grated orange zest, mixed peel, raisins and sultanas.  Mix together well, otherwise the richness of the loaf will prevent the yeast being evenly dispersed and rising nicely.

    • 3tbsp 3tbsp Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
    • 1tsp 1tsp Salt
    • 4tsp 4tsp Cinnamon ground
    • 2 2 Orange zest
    • 50g 1⅞ oz Mixed peel
    • 50g 1⅞ oz Sultanas
    • 50g 1⅞ oz Raisins
  2. Classic mode Step 2

    Add this to the pan in the breadmaker. Mix the beaten egg and water together and add to the bread pan then add in the melted butter.

    • 175ml 6 fl oz Warm water
    • 30g 1⅛ oz Butter (unsalted) melted
  3. Classic mode Step 3

    Set to a programme for a “Medium” loaf and “Raisin Bake” on the breadmaker, and turn on.

    Meanwhile, mix up the glaze by combining the sugar with the hot water until the sugar is dissolved, set aside with a pastry brush, ready for when the loaf is cooked

    • 1tsp 1tsp Water cold

    To make the topping, mix the flour, sugar and water together, and have ready in a piping bag with a thin nozzle

    • 2tsp 2tsp Unrefined golden granulated sugar (we use Billington's)
    • 2tbsp 2tbsp Water cold
  6. Classic mode Step 6

    When the bread is cooked, turn out of the pan, and immediately brush with the glaze thinly. Pipe the topping on in a cross shape, or alternatively in a crisscross pattern, making several small crosses.

    To serve, slice and spread with butter.
