Ingredients

  • 250g 8⅞ oz Very strong white bread flour (we use Allinson) Very strong white bread flour
  • 250g 8⅞ oz Very strong wholemeal bread flour (we use Allinson) Very strong wholemeal bread flour
  • 1 1 Easy bake yeast sachet (7g)
  • 1tsp 1tsp Mixed spice
  • 1tsp 1tsp Salt
  • 50g 1⅞ oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 250ml 8½ fl oz Milk (whole)
  • 1 1 Egg(s) (free range)
  • 50g 1⅞ oz Butter (unsalted)
  • 100g 3½ oz Raisins or sultanas,currants
  • 1 1 Orange zest
  • 1 1 Egg glaze to finish
  • 50g 1⅞ oz Shortcrust pastry to finish

  1. Classic mode Step 1

    Put the flour, sugar, spice, yeast and salt into a bowl.

    Stir in the milk, butter and egg to form a soft dough.

    • 250ml 8½ fl oz Milk (whole)
    • 50g 1⅞ oz Butter (unsalted)
    • 1 1 Egg(s) (free range)

    Mix in the dried fruits of your choice along with the zest of the orange.

    • 100g 3½ oz Raisins or sultanas,currants
    • 1 1 Orange zest

    Turn onto a floured surface and knead for 10 minutes.

    Place in a clean bowl and cover with a clean tea towel and leave to prove. The dough will double in size, this can take up to an hour.

    Preheat the oven to 200°C (180°C fan, gas mark 6). Divide the dough into 8 equal pieces and shape then place on a lightly floured baking tray.

    Brush with egg wash and finish the buns with a cross made from the shortcrust pastry.

    Glaze once more and bake for 15-20 minutes until golden.
