Ingredients

  • 2 2 Vanilla pods (we like Nielsen-Massey) Vanilla pods
  • 570ml 19⅜ fl oz Milk (whole)
  • 50g 1⅞ oz Skimmed milk powder
  • 4 4 Egg yolk(s) (free range)
  • 90g 3¼ oz Unrefined golden caster sugar (we like Billington's) Unrefined golden caster sugar

The Method Enter Bake mode

  1. Classic mode Step 1

    Place egg yolks into a bowl. Slit the vanilla pods open with a knife and scrape out the seeds and add to the yolks.

    • 4 4 Egg yolk(s) (free range)
    • 2 2 Vanilla pods (we like Nielsen-Massey) Vanilla pods
  2. Classic mode Step 2

    Pour the milk into a large pan, add the empty vanilla pods, skimmed milk powder and 2 teaspoons of the sugar.

    • 570ml 19⅜ fl oz Milk (whole)
    • 50g 1⅞ oz Skimmed milk powder
    • 2tsp 2tsp Unrefined golden caster sugar (we like Billington's) Unrefined golden caster sugar
  3. Classic mode Step 3

    Bring to the boil, then turn the heat down and simmer for 5 minutes. Take off the heat, cover and leave for 20 minutes to infuse.

  4. Classic mode Step 4

    Add the rest of the sugar to the egg yolks and whisk with an electric whisk until pale and thick.

    Pour the egg/sugar mixture over the milk mixture, beating all the time, ensuring it is well mixed. Heat slowly, stirring continuously, until the custard thickens. Be careful not to boil as you will scramble the egg!

  6. Classic mode Step 6

    Take off the heat and cool. Chill in the fridge for 3-4 hours.

  7. Classic mode Step 7

    Churn in an ice cream maker until frozen OR pour into a container and place in the freezer, mixing a couple of times an hour until frozen.
