Christmas Orange Cookies Ingredients

200 grams Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
0.50 tsp Pure Orange Extract (Nielsen-Massey) Pure Orange Extract (Nielsen-Massey)
1 Free Range Eggs medium Free Range Eggs
110 grams Unsalted Butter softened
195 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
0.50 tsp Cinnamon ground
0.50 tsp Baking Powder
0.50 tsp Bicarbonate Of Soda
150 grams Candied Peel

How to make Christmas Orange Cookies

  1. Preheat the oven to 190°C/Gas 5 and line 2 large baking trays with baking parchment
  2. Cream together the butter and sugar until combined. Stir in the egg, orange extract and cinnamon and mix well.
  3. Add the flour, salt, baking powder and bicarbonate of soda and mix until well combined, the dough will be quite stiff.
  4. Add the candied peel and mash together until evenly distributed.
  5. Divide the mixture into 8 - 10 balls and place on a baking tray leaving about 8cm between each one.
  6. Bake in the oven for 10-12 mins. Remove from the oven and leave to cool and firm up before transferring onto a cooling wire to cool completely.

"Very easy to make, and a tasty result. I would say they needed double the cinnamon as we couldn't taste it. I made almost three times the 15 quoted in the recipe - they would have to be huge to get only 15 out of the ingredients! "
