Summer Fairies Ingredients

150 ml Vegetable Oil
2 Free Range Eggs Free Range Eggs
1 tsp strawberry or vanilla extract
75 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
150 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)

50 grams salted butter
100 grams Icing Sugar (Silver Spoon Homegrown) Icing Sugar (Silver Spoon Homegrown)

How to make Summer Fairies

  1. Preheat the oven to 170°C/Fan 150°C/ Gas Mark 3 method tip
  2. Line a muffin tray with 10-12 paper cases method tip
  3. whisk together the oil, eggs and the strawberry or vanilla extract method tip
  4. Add the sugar and flour and mix until well blended
  5. Spoon the mixture into the paper cases and bake until golden on top
  6. Insert the tip of a knife into the cases and it should pull away clean method tip
  7. Allow to cool on a rack method tip
  8. Once cooled, draw a sharp knife slightly in at an angle around the top of the cake so that you cut a little section away. Cut it in half to make wings
  9. Icing:
  10. In a bowl, slightly warm the butter to soften and add the icing sugar a little at a time until you get the consistency you want
  11. Spoon the icing on to each cake, making sure to place the wings at angles into the butter icing
  12. Dot the sprinkles over each cake
