110 grams Butter softened
65 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
2 Happy Eggs Happy Eggs
110 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1.50 tsp Baking Powder
65 grams Dark Chocolate Chips (Silver Spoon Create) Dark Chocolate Chips (Silver Spoon Create)

How to make Choc Chip Mini Muffins

  1. Preheat the oven to 200°C, fan 180 °C, gas 6. Line a mini muffin tin with paper muffin cases.
  2. Cream the butter and sugar together then slowly add the eggs, mix for three minutes. Add the flour, baking powder and chocolate chips stir to combine, and then rest for an hour. method tip
  3. Place a spoonful of muffin mixture into each muffin case, filling each to just over half way.
  4. Bake for 20 minutes, or until golden on top. Leave to cool in the tin for 5 minutes, eat warm or cold method tip
  5. Next time try adding a handful of large handful Silver Spoon Cakecraft mini fudge chunks
