How to make Brandy Snap Ice Cream Baskets

- Press half of the raspberries through a sieve into a bowl and set aside.
- Scoop the ice cream into the brandy snap baskets and top wit the raspberries and a sprig of mint.
- Pour over a little raspberry puree and serve straight away.
