110 grams Butter

How to make Strawberry Jam Tarts

  1. Preheat the oven to 180°C/Gas 4. Grease a 12 hole tart tin with butter method tip
  2. To make the pastry, put the flour and salt into a large bowl and add the butter method tip
  3. Rub the butter into the flour using your fingertips until it looks like coarse breadcrumbs method tip
  4. Using a knife stir in enough cold water to bind the dough together
  5. Wrap the pastry in cling film and chill in the fridge for 15-20 minutes
  6. On a lightly floured surface, roll out the pastry to ½ cm thickness. Use a round cutter to cut discs of pastry, slightly larger than the hole in the tin, then press 1 disc into each hole
  7. Spoon a heaped teaspoon of strawberry jam into each pastry case
  8. Bake in the oven for 10-15 minutes or until golden brown method tip
  9. Remove the tarts from the oven and cool on a wire rack
  10. Serve with clotted cream and fresh strawberries
