Berry Bread

Try using homemade gooseberry jam for a special touch to this sweet Berry Bread. Make this recipe your own by changing the dried fruit to sultanas or cranberries. Delicious freshly baked, toasted or in a fruity bread and butter pudding.

Berry Bread Ingredients

450 grams Very Strong White Bread Flour (Allinson) Very Strong White Bread Flour (Allinson)
100 grams Blueberries semi dried
1 tsp Salt
1 sachet Easy Bake Yeast (Allinson) 1 x 7g aachet Easy Bake Yeast (Allinson)
4 tbsp Gooseberry Jam
3 tbsp Melted Butter
1 Free Range Eggs Medium, Beaten Free Range Eggs
115 ml Water
115 ml Milk Milk

How to make Berry Bread

  1. Put the flour, blueberries and salt into a bowl and sprinkle the yeast over.
  2. Mix to a soft dough with the jam, butter, egg, water and milk.
  3. Turn onto a floured surface and knead for 10 minutes. method tip
  4. Shape as desired and put into an appropriate greased tin.
  5. Leave to prove until double in size. Preheat the oven to 220°C/fan 200°C/Gas Mark 7 method tip
  6. Place in the preheated oven and immediately turn the oven down to 200°C/fan 180°C/Gas Mark 6 and bake for 25-30 minutes. method tip
  7. Cool in a wire rack before slicing. method tip

"Made this dough in my bread maker & then baked in standard loaf tin. It turned out a treat, rose really well, lovely light texture. Couldnt find gooseberry jam so used apricot with copped up dried apricots & cranberries. Will definately make again."
