Ingredients

For the possets

  • 500ml 17 fl oz Double cream
  • 125g 4½ oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 4 4 Lime(s) zest and juice

For the topping

  • 2 2 Lime(s) zest only
  • 30g 1⅛ oz Dessicated coconut

The Method Enter Bake mode

  1. Classic mode Step 1

    In a heavy based pan add the cream, sugar, lime juice and zest and bring to the boil.

    Ingredients for this step

    • 500ml 17 fl oz Double cream
    • 125g 4½ oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
    • 4 4 Lime(s) zest only
  2. Classic mode Step 2

    Remove from heat and strain the mixture into a jug through a sieve.

  3. Classic mode Step 3

    Pour into 8 small glasses and place in the fridge to set. These can be made a day in advance.

  4. Classic mode Step 4

    Just prior to serving, sprinkle the possets with some desiccated coconut and shaved lime zest.
