Ingredients

  • 450g 16 oz Strong white bread flour (we like Allinson) Strong white bread flour
  • 1tsp 1tsp Unrefined golden caster sugar (we like Billington's) Unrefined golden caster sugar
  • 1tsp 1tsp Salt
  • 1 1 Lemon juice
  • 50g 1⅞ oz Pine nuts
  • 50g 1⅞ oz Raisins
  • 50g 1⅞ oz Mixed peel
  • 1 1 Easy bake yeast sachet 7g
  • 1 1 Egg(s) (free range) beaten
  • 25g 1 oz Butter (unsalted) melted
  • 200ml 6⅞ fl oz Warm water
  • Butter (unsalted) to glaze, melted
  • 2 2 Egg(s) (free range) to glaze, beaten

The Method Enter Bake mode

  1. Classic mode Step 1

    Place all of the ingredients into a mixer with a dough hook attached. Mix to a soft dough and knead for 5 minutes.

    • 1tsp 1tsp Salt
    • 1 1 Lemon juice
    • 50g 1⅞ oz Pine nuts
    • 50g 1⅞ oz Raisins
    • 50g 1⅞ oz Mixed peel
    • 1 1 Easy bake yeast sachet 7g
    • 1 1 Egg(s) (free range) to glaze, beaten
    • 25g 1 oz Butter (unsalted) to glaze, melted
    • 200ml 6⅞ fl oz Warm water
  2. Classic mode Step 2

    If mixing by hand, put the dry ingredients into a bowl, sprinkle on the yeast and mix to a soft dough with the butter, lemon juice, egg and water. Knead on a floured board for 10 minutes.

    Place the dough into a round, greased tin (18cm/7” diameter x 9cm/3½” deep).

    Leave to prove until double in size then glaze with the beaten eggs.

    Bake at 190°C (170°C fan, 370°F, gas mark 5) for 30 minutes.

    Brush the panettone with melted butter while still warm.
