Ingredients

  • 200g 7⅛ oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 600ml 20⅜ fl oz Orange juice freshly squeezed
  • 4 4 Mint leaves
  • ¼ ¼ Cucumber diced
  • 150ml 5⅛ fl oz Pimms

The Method Enter Bake mode

  1. Classic mode Step 1

    Put the sugar and orange juice into a large saucepan and bring to the boil, stirring until the sugar dissolves.

    Take off the heat and add the mint sprigs and diced cucumber, cover and leave for about 20 minutes.

    • 4 4 Mint leaves
    • ¼ ¼ Cucumber diced
  3. Classic mode Step 3

    Strain into a large bowl, removing the cucumber and mint. Add the Pimm’s and stir to combine.

     

    Ingredients for this step

    • 150ml 5⅛ fl oz Pimms
  4. Classic mode Step 4

    Chill in the fridge for about 4 hours or overnight.

  5. Classic mode Step 5

    Churn in an ice cream maker according to manufacturer’s instructions OR place in the freezer, stirring every hour until frozen. This should take about 6 hours.
