This treat is a grown up version of eggy bread, also known as french toast and was historically served to impoverished, retired officers given lodgings at Windsor Castle in return for officiating at ceremonies and services. With yummy undertones of cinnamon and Cointreau this recipe is truly delicious and is wonderful served with fresh berries and dusted with icing sugar.

Ingredients

  • 5 5 Egg(s) (free range)
  • 400ml 13½ fl oz Milk (whole)
  • 2tsp 2tsp Vanilla extract (we like Nielsen-Massey) Vanilla extract
  • 80g 2⅞ oz Unrefined golden caster sugar (we like Billington's)
  • 1tsp 1tsp Cinnamon ground
  • 1tbsp 1tbsp Cointreau
  • 30g 1⅛ oz Butter (unsalted)
  • 6 6 Bread Pumpkin and Sunflower Seed, slices

For the decoration

  • Icing sugar (we like Silver Spoon)
  • Golden syrup (we like Silver Spoon)

The Method Enter Bake mode

  1. Classic mode Step 1

    Whisk the eggs, milk, vanilla, caster sugar, cinnamon & Cointreau in a shallow bowl.

    • 400ml 13½ fl oz Milk (whole)
    • 2tsp 2tsp Vanilla extract (we like Nielsen-Massey) Vanilla extract
    • 80g 2⅞ oz Unrefined golden caster sugar (we like Billington's)
    • 1tsp 1tsp Cinnamon ground
    • 1tbsp 1tbsp Cointreau
  2. Classic mode Step 2

    Cut each slice of bread into triangles.

    • 6 6 Bread Pumpkin and Sunflower Seed, slices
  3. Classic mode Step 3

    Soak the bread in the egg mixture for about 30 seconds then cook on a hot buttered griddle pan until cooked through.

  4. Classic mode Step 4

    The bread should be crisp on the outside and soft and gooey on the inside. Repeat this for all of the bread.

  5. Classic mode Step 5

    To serve, drizzle with golden syrup and a dusting of icing sugar.

    For a slightly healthier version serve with mixed berries.
