Marmalade Gingerbread

Fool-proof recipe - the marmalade adds a lovely light touch to the flavour. Of course it really improves with maturity & 3 days under wraps is well worth the wait. -


Toffee Mocha Cupcakes

I adapt all my recipes to wheat-free flour & dairy-free spread and these came out tasting fantastic. Very quick & simple. Nice texture to the cake & the icing is perfect. Ideal with a coffee. The only problem is stopping everyone scoffing them... -


Tiramisu Mini Treats

Just tried this recipe for the first time - the cakes themselves are delightfully light in texture but still flavoursome. I think the portion size would be better if 6-9 cakes were made from this mix rather than 12 - a little on the thin side. We taste tested the plain cakes: very good, then cakes with cream cheese icing: even better with refreshing tasting topping. I finally decorated some with the chocolate frosting from the Toffee Mocha Cupcakes recipe (to which I also added a teaspoon of rum flavouring) before putting the cream cheese icing on - Out Of This World! Really gave an authentic tiramisu richness and indulgence. This may become a new family favourite. -


Chocolate and Vanilla Cupcakes

I adapted this one with wheat-free flour & soya cream cheese & they were just to die for. They are exactly whay I need for our 20th wedding anniversary party this autumn. The method is very easy - I think it would be a good one to do when we're away camping. -


Low Calorie Cranberry Rock Buns

A nice easy recipe, quick to rustle up! I find craisins a little too tart & did 50/50 with raisins & added 1tsp orange essence which really improves the flavour. For those not so calorie conscious I use 45g molasses sugar to make them really rich. -
