Biscuit medals Ingredients

100 grams Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
3 tbsp Golden Syrup (Silver Spoon) Golden Syrup (Silver Spoon)
125 grams Butter diced
1 tsp Bicarbonate Of Soda
225 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
2 tbsp Ginger ground
1 tbsp Cinnamon ground

Additional Ingredients

500 grams White Ready To Roll Icing (Silver Spoon Create) White Ready To Roll Icing (Silver Spoon Create)
Gold Lustre for decoration
Bronze Lustre for decoration
Edible Silver Glitter for decoration
1 tbsp Apricot Jam warmed, sieved
Butter Cream A little to decorate

How to make Biscuit medals

  1. Place 3 tbsp water into a medium saucepan with the sugar and syrup. Stir until the sugar has dissolved then bring to the boil. Remove from the heat. Add the diced butter and stir until melted. Whisk in the bicarbonate of soda, it will foam a little. Add the flour and spices, beat well to make a soft dough. Wrap in cling film and chill for 3 hours or overnight until firm enough to roll out.
  2. Line 2- 3 baking trays with baking parchment and pre heat the oven to 200°c, 180°c fan, gas 6. method tip
  3. Dust the work surface with flour and roll out the dough to the thickness of a £1 coin and cut out 2012 with number cutters. Make a hole in the top of each biscuit wit the end of an artists paintbrush
  4. Bake for 10-12 mins or until just turning darker brown at the edges. Allow to cool completely before removing from the tin. Make sure the holes in the biscuits are open by using the paint brush to poke through the mixture gently
  5. Roll out the icing on a work surface dusted with icing sugar and use the same cutters, t cut circles of icing,. Brush the biscuits very thinly with jam then place the icing on top.
  6. Brush the icing with the luster powders of glitter to make gold, silver and bronze medals. Pipe a little butter cream on top to write the words and numbers. Thread with ribbon if liked.
  7. These will keep in a cake tin for 1-2 weeks
