Chocolate Mint Kisses Ingredients

100 grams Butter (softened)
50 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
tbsp Cocoa Powder
150 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
100 grams Icing Sugar (Silver Spoon Homegrown) Icing Sugar (Silver Spoon Homegrown)
Peppermint Extract (Nielsen-Massey) (2-3 drops to taste) Peppermint Extract (Nielsen-Massey)
Pink Food Colouring (Silver Spoon Create) (a few drops)
Silver Spoon Cakecraft Green Food Colouring (a few drops)

How to make Chocolate Mint Kisses

  1. Heat the oven to 180°C/160°C fan/gas 4. method tip
  2. Beat the butter and sugar together in a bowl until light and creamy. method tip
  3. Add the flour and drinking chocolate or cocoa powder, to make a soft dough. Bring the dough together with your hands then roll into about 10 balls.
  4. Place the balls of dough onto 2 ungreased baking trays, allowing room for them to spread when baked. Flatten each slightly with a fork.
  5. Bake the biscuits for 10 minutes. Then leave to cool on the tray.
  6. While the biscuits cool, beat the butter and icing sugar together until smooth and creamy. Adding a drop of boiling water if necessary.
  7. Divide into 2 bowls and add a drop of pink colouring to one bowl and green to the other. Spread the icing on top of 10 biscuits and sandwich together with the other 10. Store in a cake tin for 1 week.
