100 grams Butter
200 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
50 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
2 Egg Yolk Egg Yolk

100 grams Caster Sugar (Silver Spoon Homegrown) Caster Sugar (Silver Spoon Homegrown)
150 grams Desiccated Coconut

How to make Coconut slice

  1. Set oven to 180°C/ 160°C fan/ Gas 4. Line the base of a shallow baking tray (about 18x28x4cm deep) with baking paper
  2. In a large bowl, rub the butter into the flour until it resembles breadcrumbs, then stir in the sugar. Mix in the egg yolks and 1-2 tablespoons cold water to form a soft dough. Press evenly into the base of the tin, then spread the jam on top method tip
  3. In a clean bowl, whisk the egg whites until they form soft peaks. Using a large metal spoon, fold in the sugar and coconut. Spread over the jam.
  4. Bake for 25 minutes, or until the topping is golden. Cool in the tin, then cut into slices to serve method tip
