Easter Biscuits Ingredients

100 grams Butter unsalted, diced
100 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 Happy Eggs medium, beaten Happy Eggs
200 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
0.50 tsp Ground mixed spice
0.25 tsp Ground Cinnamon
50 grams Currants plus extra for decorating
2 tbsp Mixed Peel plus extra for decorating
1 Happy Eggs white, lightly beaten Happy Eggs
Golden Icing Sugar (Billington's) for decorating Golden Icing Sugar (Billington's)

How to make Easter Biscuits

  1. Preheat the oven to 180 C fan/ 200 C/ Mk 6.
  2. In a bowl cream the butter and sugar together with an electric whisk, or a wooden spoon. method tip
  3. Beat in the egg followed by the remaining ingredients apart from the egg white and Demerara sugar, to make a fairly soft dough.
  4. Turn the dough on to a floured surface, knead lightly until just smooth, then roll out on a lightly floured work surface to about 5mm thick. Using Easter shaped cutters, such as egg shapes, bunnies or chicks, cut the dough out into shapes. Re-roll and repeat until all the dough is used up. Brush each biscuit with egg wash and using the extra currants, mixed peel and sugars decorate the biscuits.
  5. Transfer the shapes to two lined baking trays and bake for 10-12 minutes until golden
  6. Transfer to a wire rack to cool.
