Easter Biscuits

These are perfect to make with the children and are ideal presents. Just pop a few into some cellophane bags and tie the tops with some coloured ribbon

Easter Biscuits Ingredients
| 100 grams | Butter unsalted, diced | |
| 100 grams | Golden Caster Sugar (Billington's) | ![]() |

| 200 grams | Plain White Flour (Allinson Nature Friendly) | ![]() |
| 0.50 tsp | Ground mixed spice | |
| 0.25 tsp | Ground Cinnamon | |
| 50 grams | Currants plus extra for decorating | |
| 2 tbsp | Mixed Peel plus extra for decorating | |

How to make Easter Biscuits

- Preheat the oven to 180 C fan/ 200 C/ Mk 6.
- In a bowl cream the butter and sugar together with an electric whisk, or a wooden spoon.
- Beat in the egg followed by the remaining ingredients apart from the egg white and Demerara sugar, to make a fairly soft dough.
- Turn the dough on to a floured surface, knead lightly until just smooth, then roll out on a lightly floured work surface to about 5mm thick. Using Easter shaped cutters, such as egg shapes, bunnies or chicks, cut the dough out into shapes. Re-roll and repeat until all the dough is used up. Brush each biscuit with egg wash and using the extra currants, mixed peel and sugars decorate the biscuits.
- Transfer the shapes to two lined baking trays and bake for 10-12 minutes until golden
- Transfer to a wire rack to cool.
