This is a delicious recipe to serve for a birthday instead of the usual cake. It is very similar to a flapjack in texture and flavour, add chocolate chips or raisins to the mixture if liked.

125 grams Porridge Oats
0.50 tsp Bicarbonate Of Soda
125 grams Butter unsalted
100 grams Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
3 tbsp Golden Syrup (Silver Spoon) Golden Syrup (Silver Spoon)

How to make Giant Birthday Cookie

  1. Preheat the oven to 180°C, 160°C fan/gas 4. Grease and line the base of a 7.9in/20cm round loose bottom sponge tin method tip
  2. Mix the flour, oats and bicarbonate of soda together.
  3. Place the butter in a pan and allow to melt. Add the sugar and syrup and cook for just a minute until warmed through but do not boil. Add the flour and oat mixture and stir well.
  4. Pack the mixture into the cake tin and press down evenly.
  5. Bake for 15-18 minutes. It will still feel very soft in the centre but it will firm up when cooled. Allow to cool completely in the tin. method tip
  6. To decorate: Fit he star shaped nozzle on the end of the White Designer icing tube and pipe stars around the outside, pop a choco bean on top of each star. Place the writing nozzle on the icing tube and write a message on the cookie.
  7. This will keep for up to a week in a cake tin.
