Iced Easter Biscuits Ingredients

325 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
200 grams Butter (chilled)
125 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
2 tsp Vanilla Extract (Nielsen Massey) Vanilla Extract (Nielsen Massey)
2 Egg Yolk Egg Yolk

Additional Ingredients

To decorate

1 tbsp Apricot Jam (warmed and sieved)
250 grams Ready to Roll Icing Ready to Roll Icing
Pink Food Colouring
Blue Food Colouring
Purple Food Colouring
Yellow Food Colouring
Green Food Colouring
Coloured Chocolate Beans

How to make Iced Easter Biscuits

  1. Set the oven to 180°C/160°C fan/Gas Mark 4. Lightly grease 2-3 baking trays. method tip
  2. Place the butter, flour and sugar in a food processor and blend until it makes fine crumbs. Add the egg yolks and continue to blend until the mixture clumps together. Alternatively, if you are making the recipe by hand, rub the butter into the flour until it forms bread crumbs, then stir in the sugar and egg yolks and beat with a wooden spoon until it forms a dough. method tip
  3. Turn out onto a lightly floured work surface and knead lightly into a ball. Wrap in cling film and chill for 30 mins.
  4. Roll the mixture out on a lightly floured work surface, then using cutters cut out your shapes, letters or words. method tip
  5. Bake for 10-15 mins depending on size and thickness, or until just pale golden. Allow to cool for 10 mins on the baking trays then cool completely. If liked, sandwich the biscuits together with jam or buttercream and dust them with a little icing sugar.
  6. Divide the ready to roll icing into portions and add a drop of food colouring to each and knead until the colour is even. Wrap the icings tightly in cling film to prevent drying. method tip
  7. When you are ready to begin decorating dust the work top with a little icing sugar and roll out the coloured icing thinly. Using the same cutters that you used for the biscuits cut out the icing into shapes.
  8. Before laying the icing on the biscuit spread very thinly with a little of the warm apricot jam to allow the icing to stick.
  9. To finish decorate the iced biscuits with coloured chocolate beans, securing each in place hoco button with a dot of writing icing. You could also pipe an Easter message into your biscuits or use the coloured writing icing or decorate them.
