This biscuit recipe uses royal icing for decoration, but if you find it easier, just roll out coloured ready to roll icing and use the same biscuit cutters to cut out the icing and lay it on top of the biscuits to decorate. Brush the biscuits with a little apricot jam to help the icing stick.
