Shortbread Ingredients

250 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
200 grams Unsalted Butter chilled
100 grams Golden Icing Sugar (Billington's) Golden Icing Sugar (Billington's)
2 Egg Yolk Egg Yolk
1 tsp Vanilla Extract (Nielsen Massey) Vanilla Extract (Nielsen Massey)

300 grams Raspberries
300 grams Strawberries
2 tbsp Golden Icing Sugar (Billington's) Golden Icing Sugar (Billington's)
1 Lemons
 

Further Additional Ingredients

300 grams Strawberries hulled, plus extra to garnish

How to make Shortbread

  1. Preheat the oven to 180°C/ 160°C fan/ 350°F/ Mark 4. Line a baking tray with baking paper method tip
  2. In a bowl add the butter, sifted flour and work the mixture with your finger tips to form crumbs. Make a well and add sifted icing sugar, the egg yolks and the vanilla extract. Mix the ingrediants together until combined and forms into dough. Wrap in cling film and leave to rest in the fridge for at least 30 minutes method tip
  3. Lightly dust the work surface with some flour and roll out the pasrty to 5mm thick. Using a fluted pastry cutter cut out 12 discs (3 discs per serving) and lay them onto the lined baking tray. Prick the pastry with a fork and bake for 10 minutes. Once cooked and golden, remove from the oven and leave to cool
  4. For the coulis, put the raspberries and strawberris into a food processor and add the icing sugar and the juice of the lemo. Process until pureed. Pass it through a sieve into a bowl
  5. Halve the straberries and add into the coulis and gently fold in, coating them well
  6. On a serving plate place a shortbread and arrange some strawberries on the shortbread. Top with another shortbread and repeat with strawberries and finally finishing with a shortbread on the top. Dust with icing sugar, spoon some coulis around the shortbread stack and garnish with more fresh straberries
