Tuilles Ingredients

50 grams Butter
2 Free Range Eggs whites Free Range Eggs
110 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
50 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1 tsp Ground mixed spice
75 grams Golden Granulated Sugar (Billington's) Golden Granulated Sugar (Billington's)

How to make Tuilles

  1. Melt the butter and cool slightly.
  2. Whisk the egg whites until stiff but not dry, then fold in the Golden caster sugar, melted butter, flour and mixed spice. method tip
  3. Spoon onto baking trays lined with non-stick baking paper and spread each spoonful into a 10cm (4 in) circle.
  4. The mixture will be very thin.
  5. Bake in batches for 5-6 minutes Gas 5/190°C/375°F until tinged with gold.
  6. Immediately remove from the tray, using a fish slice and wind the biscuits around the greased handles of wooden spoons.
  7. When cooled slightly remove from the handles and place on a wire rack to cool.
  8. If the biscuits become hard during shaping return to the oven for a few seconds until softened.
