Dan's Heavenly Wholemeal Loaf

Ingredients

100 grams Allinson Premium Wholemeal Very Strong Bread Flour Overnight sponge
1 tsp Runny Honey Overnight sponge
1 tsp Allinsons Easy Bake Yeast Overnight sponge
100 ml Water warm, overnight sponge
245 ml Water warm
1 ½ tbsp Vegetable Oil
2 tsp Salt
¾ tbsp Runny Honey
250 grams Allinson Seed & Grain Bread Flour
150 grams Allinson Premium Wholemeal Very Strong Bread Flour
1 ¼ tsp Allinsons Easy Bake Yeast

Method

  1. Mix the ingredients together into a smooth dough.
  2. Cover the bowl with a tea towel and leave to ferment for 2 hours. Then cover with film and place in the fridge overnight.
  3. Next morning remove from the fridge 30 minutes before you want to start making your loaf. Then follow the method below.
  4. Put the ingredients, together with the overnight sponge, into the bread maker baking pan in the order specified for your particular model (see manufacturer’s handbook).
  5. Set to the Wholemeal Rapid/Rapid Program for the appropriate size loaf.

"I made this loaf today, I had never heard of the overnight sponge method,but managed to follow the instructions OK. I used my Morphy Richards breadmaker and the resulting loaf is well risen and delicious. I have found wholemeal loaves heavy and dense in the past so was pleased with the open, light texture,Hilary"
