Hot Cross Bun Loaf Ingredients

400 grams Very Strong White Bread Flour (Allinson) Very Strong White Bread Flour (Allinson)
1.50 tsp Easy Bake Yeast (Allinson) Easy Bake Yeast (Allinson)
3 tbsp Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
1 tsp Salt
4 tsp Cinnamon ground
2 Orange grated zest
50 grams Mixed Peel
50 grams Sultanas
50 grams Raisins
30 grams Butter melted
1 Happy Eggs beaten Happy Eggs
175 ml Water warm

Additional Ingredients

1 tbsp Golden Granulated Sugar (Billington's) for the glaze Golden Granulated Sugar (Billington's)
1 tsp Water boiling, for the glaze
3 tbsp Plain White Flour (Allinson Nature Friendly) for the cross Plain White Flour (Allinson Nature Friendly)
2 tsp Golden Granulated Sugar (Billington's) for the cross Golden Granulated Sugar (Billington's)
2 tbsp Water cold, for the cross

How to make Hot Cross Bun Loaf

  1. In a bowl, mix together the flour, yeast, sugar, salt, cinnamon, grated orange zest, mixed peel and sultanas. Mix together well, otherwise the richness of the loaf will prevent the yeast being evenly dispersed and rising nicely. method tip
  2. Add this to the pan in the breadmaker. Mix the beaten egg and water together and add to the bread pan then add in the melted butter.
  3. Set to a programme for a "Medium'' and "Raisin Bake'' on the breadmaker, and turn on.
  4. Meanwhile, mix up the glaze- combine the sugar with the hot water until the sugar is dissolved, set aside with a pastry brush, ready for when the loaf is cooked
  5. To make the topping, mix the flour, sugar and water together, and have ready in a piping bag with a thin nozzle
  6. When the bread is cooked, turn out of the pan, and immediately brush with the glaze thinly. Pipe the topping on in a cross shape, or alternatively in a crisscross pattern, making several small crosses method tip
  7. To serve, slice and spread with butter

"I wanted a fruity bread recipe for my bread machine and tried this one. It was very easy to do and I added a lot more fruit as had been suggested by others. This worked very well. In appearance it was a bit brick-like (probably my machine) but the flavour was delicious. We ate it toasted and buttered with chunks of cheddar cheese. Perfect winter tea time treat! I omitted the icing as I wanted a toasting loaf. All in all, perfect!"

"Great flavour and way easier than forming everything into little buns! Nice rising and great loaf even without the glaze and cross. It kept for a few days without going too stale and was extra tasty toasted with a little butter. The recipe doesn't say, but use the 1.5lb loaf setting on your bread machine!"
