Chocolate, Pistachio and White Chocolate Loaves Ingredients

100 grams Plain Chocolate broken into chunks (no need to use a high cocoa content)
100 grams Butter
100 grams Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
50 ml Sour Cream
1 Happy Eggs Happy Eggs
100 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
75 grams White Chocolate chopped
75 grams Pistachios chopped

How to make Chocolate, Pistachio and White Chocolate Loaves

  1. Pre Heat oven to 180°C/fan oven 160°C/Gas Mark 4. method tip
  2. Melt the butter with 50ml hot water in a medium pan until melted. Add the chocolate and stir until melted. Cool for a minute or two then stir in the sugar, sour cream and egg. method tip
  3. Whisk the flour and cocoa powder into the chocolate mixture until smooth. Stir in most of the chopped white chocolate and pistachio nuts.
  4. Divide the mixture between 6 mini loaf tins or muffin moulds and sprinkle the remaining pistachio nuts and chopped chocolate on top.
  5. Bake for 20-30 minutes until risen and just firm to the touch. Allow to cool. Turn out and drizzle with the melted chocolate method tip
  6. Tip – omit the pistachio and chocolate chunks if you prefer a plainer cake, or add chopped peanuts or milk chocolate chunks
