Guinness Cake

This cake is ideal for Father's Day baking as Dad is sure to love it! It's rich, moist and utterly delicious. The dark muscovado sugar brings out the flavour of the Guiness and makes the cake really moist while the golden icing sugar makes a fudgy toffee flavour topping. A real winner!

Guinness Cake Ingredients

250 grams Unsalted Butter
400 grams Dark Muscovado Sugar (Billington's) Dark Muscovado Sugar (Billington's)
200 ml Guinness or Dark Stout Beer
75 grams Cocoa Powder
150 ml Sour Cream
2 Free Range Eggs Free Range Eggs
275 grams Self Raising Wholemeal Flour (Allinson) Self Raising Wholemeal Flour (Allinson)
1 tsp Baking Powder
0.50 tsp Bicarbonate Of Soda

To make the topping

50 grams Unsalted Butter
300 grams Cream Cheese
200 grams Golden Icing Sugar (Billington's) Golden Icing Sugar (Billington's)

How to make Guinness Cake

  1. Heat the oven to 180°C, 160°C fan. Gas 4. Grease and line the base of a 23cm round cake tin with baking parchment. method tip
  2. Place the butter, muscovado sugar and cocoa powder in a saucepan and heat gently until the butter has melted. Stir in the Guinness then pour into a mixing bowl.
  3. Beat the sour cream into the melted mixture then beat in the eggs. method tip
  4. Stir the flour, baking powder and bicarb into the mixture then pour into the cake tin and bake for 45 mins until the mixture is risen, firm to the touch and has just begun to shrink from the sides of the tin. method tip
  5. Allow to cool for 15 minutes in the tin, then turn out and allow to cool completely. method tip
  6. To make the topping; Beat the butter and cream cheese until smooth then beat in the sifted icing sugar and spread over the cake.
