This is a lovely moist cake with the addition of dried mango pieces. Try other flavours too, such as cranberries and orange zest, apricots and almond extract.

Mango Cake Ingredients

225 grams Butter
225 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
4 Free Range Eggs beaten Free Range Eggs
250 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
125 grams Dried Mango finely chopped
1 Lime Zest grated

500 grams Golden Icing Sugar (Billington's) Golden Icing Sugar (Billington's)
250 grams Unsalted Butter

How to make Mango Cake

  1. Place the butter and sugar in a mixing bowl and beat until light and creamy. Gradually beat in the eggs, adding a little flour if the mixture begins to curdle.
  2. Fold in the flour, chopped mango and lime zest .
  3. Remove the paddle from the baking machine pan and line the base with a little baking parchment
  4. Spoon the cake mixture into the baking container and place in the bread machine
  5. Set the bread machine to Bake Mode and the timer for 1 hour 5 mins. The cake should be risen, golden brown and firm to the touch
  6. Leave to cool for 5 mins in the tin then turn out and leave to cool.
  7. For the buttercream, put the butter and icing in a bowl and whip until it becomes light and fluffy. Cover the top of the cake with the buttercream and serve.

"Came out pretty well but didn't shout "mango" - could easily have been dried apricots, which are cheaper. I may try it with mango slices - available in pots of natural juice - to see if it has a more mango flavour."
